About our Food:
Bewilder makes it's sausages and pastrami from scratch. Our hand made sausages use only fresh ingredients, sourced locally when possible. Our Chef cuts down, grinds, and cases the sausage weekly. We also brine fresh beef for the pastrami and smoke it out on the patio weekly. If you come early enough you can sit on our patio and smell this amazing product being created. Our hand made food uses classic techniques for and "old world" style that you just have to experience to appreciate.
About our Beer:
Bewilder uses style specific grain for all of our beers. Trading the ease of a silo full of base grain, for premium malt grown and malted in the area unique to the style we are brewing. For instance our Kolsch uses malt from Cologne Germany, and our ESB uses floor malted grain from the UK. We also use water profiles that are regionally specific, giving Bewilder beer a character as close to the original style as possible. Our American base malt come almost exclusively from Solstice Malting Company allowing us to source malt as local as possible when brewing American styles, and making us one of only two Certified Craft Malt breweries in Utah.
